This is just a brief list of some of the resources for study of early versions of the Bible. There are a number of others that I will add soon.
Introduction to the early versions of the New Testament
Overall we must still use G. Horner for the Sahidic and Bohairic NT. Complete lists of biblical mss are being compiled for the Biblia Coptica project at the Forschungsinstitut für Koptologie und Ägyptenkunde.
Note also the Intitut für Neutestamentliche Textforschung's Liste der koptischen Handschriften des Neuen Testaments.

So far there are critical editions of Matthew, Mark, The Prison Epistles and the Catholic Epistles.

Interlinear text of the Peshitta of Matthew to Acts
Gospels: G.A. Kiraz, Comparative Edition of the Syriac Gospels Aligning the Sinaiticus, Curetonianus, Peshitta and Harklean Versions (4 vols.; Leiden: E.J. Brill, 1996). This is the most useful edition for most purposes. However, it lacks the critical apparatus of the edition of Pusey and Gwilliam for the Peshitta Gospels. Andreas Juckel is preparing a critical edition of the Harclean Gospels.
Acts: Peshitta and Harclean in preparation by Intitut für Neutestamentliche Textforschung.
Epistles: Aland B. and A. Juckel, Das Neue Testament in syrischer Überlieferung.
An interlinear version of the entire Syriac NT is under preparation. More details supplied upon request.
